Tuscan Slow Cooked Sausage & Pasta

This dish is easy to recreate both at home or on holiday and is a sure fire winner with the children! Why not try with fresh pasta to fully appreciate the rich flavours from the sausages and sauce! Mums and Dads might also want to try this with a glass of Chianti!

Ingredients (serves 3-4)


30ml olive oil
8 lightly spiced Italian sausages
1 onion, finely chopped
2 cloves crushed garlic
1 bay leaf
2 x 400g cans chopped toms
pinch nutmeg
salt & pepper
125g grated parmesan
125ml double cream
300g cooked penne pasta

  1. Heat the oil in a pan. Skin the sausages and break up, place in the pan and cook slowly for about 4 mins. Once it begins to brown, add the onion, garlic and bay leaf.
  2. Cook really slowly for about 30 mins, until the onions are soft and golden.
  3. Add the toms and simmer for about 45 mins until you’ve got a thick sauce.
  4. Finally add the nutmeg, cream and parmesan.
  5. Serve on top of the cooked pasta.
