Moules Mariniere

A favourite dish found in any French seaside town or port - Moules Mariniere! An easy dish to prepare home or away. Instead of bread why not simply try this dish with a bowl of frites, then sit back and you could be in Brittany, the Vendée, on the Riviera....

Ingredients (serves 2)

1kg cleaned mussels
1 onion, sliced
30ml olive oil
1 bay leaf
200ml glass dry white wine
300ml water
clove chopped garlic
salt & pepper
lots of chopped parsley

  1. Gently fry the onion in oil, then add the liquid and bay leaf, add the mussels, turn up the heat. Cover and give a good shake
  2. As soon as the mussels open, throw in the chopped parsley, spoon a good portion into a bowl and serve with bread. (if you want to be naughty, drain off the juice, put it back in the pan and stir in a glug of cream, or whisk in about 30g butter).
